guest post: panty dropper cupcakes

Last week my sister-in-law asked if I would make pink and blue cupcakes for the “Gender Reveal Party” of their first child. Since Ali has been asking for quite some time to do another cupcake post I thought it was a perfect opportunity.

The recipe I was asked to make is one that I came up with a couple of years ago based on a cupcake from Salt Lake City cupcake shop The Sweet Tooth Fairy called the “Va-NIE-lla Squared.” Since my recipe is slightly different than theirs some of my friends have re-dubbed them the “The Panty Dropper aka The Ryan Gosling.” Some say they’re that good. I’ll gladly take the compliment. However, around family and mixed company they’re still just the “Va-NIE-lla Squared”.
I used Wilton’s food coloring for the frosting which creates the most vibrant colors and decided to go with a pink and blue swirl. It’s a super simple technique, you can find the directions for two tone frosting here: http://www.youtube.com/watch?v=mUawMYKM29E

Generally though, I just keep the frosting its natural color and swirl on top with a piping bag.

Va-NIE-lla Squared aka The Panty Dropper aka The Ryan Gosling Cupcake

• 1/2 cup vanilla yogurt

• 2/3 cup milk

• 1/3 cup canola oil

• 3/4 cup plus 2 Tb sugar

• 1 tsp pure vanilla extract

• 1 tsp pure almond extract

• 1/2 tsp coconut extract

• 1/2 tsp cherry extract

• 1 1/4 cup all-purpose flour

• 2 Tb cornstarch

• 1/2 tsp baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt
1. Preheat oven to 350 F. Line cupcake pan with paper liners

2. In a large bowl, mix together the yogurt, milk, oil, sugar and extracts until completely combined.

3. In a small bowl, add the flour, corn starch, baking soda, baking powder, and salt. Use a whisk to mix the ingredients together.

4. Slowly add the dry ingredients to the wet ingredients until completely mixed on low-medium speed with an electric mixer.

5. Fill the cupcake liners 2/3 full with batter and bake for approximately 18-20 minutes or until toothpick inserted into the center of the cupcake comes out clean.

Va-NIE-lla Squared aka The Panty Dropper aka The Ryan Gosling Frosting
• 10 Tb butter

• 3 cups powdered sugar (approx.)

• 3 Tb milk

• 1 tsp pure vanilla extract

• 1 tsp pure almond extract

• 1/2 tsp coconut extract

• 1/2 tsp cherry extract

1. Cream the butter with an electric mixer on medium-high speed until pale and fluffy.

2. Add the milk, extracts, and 1 cup of confectioner’s sugar. Mix until combined with the electric mixer.

3. Add the rest of the confectioner’s sugar 1/2 cup at a time until you get a spreadable consistency (or one that you are happy with).
